Pulled Pork on Big Green Egg
Start with a boneless pork shoulder, remove and rinse.
Slather in mustard
cover in seasoning of your choice (i was lazy and used famous daves). be sure to tuck seasoning in between meat and fat folds.
Heat BGE to 325
Smoke until meat reads 160 at deepest point (2-3 hours)
remove from grill, tightly wrap in foil pouring in about 1/4 cup apple cider vinegar prior to sealing.
Cook in convection oven at 275 until pork reaches approximately 190-200 degrees (another 3-6 hours).
Remove from oven, discard foil and exterior string, shred/pull with fork and enjoy!
